1/2 cup butter
2 cups sugar
3 cups flour
1/4 cup molasses or syrup
2 cups crushed peanuts
1 cup rum
1/4 tsp salt
1/2 tsp baking powder
1/2 lb mixed fruit
1/4 cup milk
Preheat oven to 350 degrees F (175 degrees C). Grease and flour 9 inch round cake pans.
In a large bowl, cream the butter and sugar until light and fluffy.
Beat in eggs, milk then add rum, raisins, crushed peanuts.
Stir in mixed fruits and molasses. Sift together flour, baking powder and salt.
Fold into batter, being careful not to over-mix.
Pour into prepared pans.
Bake in preheated oven for 80 to 90 minutes, or until a knife inserted into the centre comes out clean.
Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.
