Ripe Banana Fritters

Ingredients
3 bananas (overripe)
½ cup brown sugar
1 tablespoon vanilla essence
1 tablespoon nutmeg
2 eggs
2 Cups flour (or more for thicker mixture)
1 teaspoon baking powder
Instructions
Crush bananas until they are like creamy.
Beat eggs
Combine flour, baking powder, sugar and nutmeg in a bowl
Add eggs and bananas then mix.
Add more flour for a thicker mix.
Heat saucepan with vegetable oil
Ensure oil is very hot then scoop a small batter into the frying pan.
Deep fry in a saucepan till brown and crisp on the edges.
Remove from fry pan and put to drain on paper towel and serve.
