There is no need to throw away your overripe bananas. This recipe is used amongst Jamaicans to whip up a quick and easy breakfast or snack.
3 overripe bananas
2 tbsp cooking oil
pinch grated nutmeg
1 teaspoon salt
2 1/2 Cup Flour
1 cup water
1/4 cup sugar
In a large bowl mash bananas to a creamy paste
Combine flour, sugar and nutmeg
In a large frying pan add 2 tsp of oil, set fire to high
Use serving spoon to scoop batter into frying pan
Fry in a frying pan until golden brown and crisp on both sides.
Remove from pan and place on paper towel
Sprinkle sugar and serve warm
